Keto Tuna Kimbap

Ingredients:

  • 4 sheets nori (seaweed) ๐ŸŒฟ
  • 1 can tuna (drained) ๐ŸŸ
  • 2 tbsp mayonnaise (keto-friendly)
  • 1 tsp sesame oil
  • Salt & black pepper (to taste)
  • 1 cucumber (cut into thin strips) ๐Ÿฅ’
  • 1 carrot (julienned) ๐Ÿฅ• (optional โ€“ slightly higher carbs)
  • 1 avocado (sliced) ๐Ÿฅ‘
  • 2 eggs (for omelette strips) ๐Ÿณ
  • 1 cup cauliflower rice (lightly cooked) (rice substitute)
  • Sesame seeds (optional)

๐Ÿ‘ฉโ€๐Ÿณ Instructions:

  1. Prepare tuna filling:
    In a bowl, mix tuna, mayonnaise, sesame oil, salt, and pepper.
  2. Cook cauliflower rice:
    Lightly sautรฉ cauliflower rice for 3โ€“4 minutes and let it cool.
  3. Make egg strips:
    Cook eggs like a thin omelette, then cut into long strips.
  4. Assemble kimbap:
    • Place a nori sheet on a mat
    • Spread a thin layer of cauliflower rice
    • Add tuna mixture, cucumber, avocado, carrot, and egg strips
  5. Roll tightly:
    Roll it carefully into a log shape.
  6. Slice:
    Cut into bite-size pieces.
  7. Serve:
    Sprinkle sesame seeds on top and enjoy
