Sourdough Discard Cinnamon Twist Bread

🍞 Ingredients

Dough

  • 1 cup (240 g) sourdough discard (unfed, at room temperature)
  • 1 cup (120 g) all-purpose flour
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • ¼ teaspoon instant yeast (optional, for quicker rising)
  • 2 tablespoons unsalted butter, softened
  • 1–2 tablespoons milk (only if the dough needs extra moisture)

Cinnamon Sugar Filling

  • 2 tablespoons melted butter
  • ⅓ cup brown sugar
  • 1 tablespoon ground cinnamon

Optional Topping

  • Powdered sugar for dusting

Simple Glaze (optional):

  • ½ cup powdered sugar
  • 1–2 teaspoons milk

👩‍🍳 Instructions

1️⃣ Prepare the Dough

In a mixing bowl, combine the sourdough discard, flour, sugar, salt, and softened butter.
Mix everything together until it forms a rough dough.

If the dough feels too dry, add a small amount of milk until it comes together.

Knead the dough by hand or with a mixer for about 5–6 minutes until it becomes smooth and slightly elastic.

Cover the bowl and allow the dough to rise for around 1 hour, or until it looks soft and slightly puffed.
(Adding yeast helps the dough rise faster, especially in cooler kitchens.)


2️⃣ Prepare the Filling

In a small bowl, combine the melted butter, brown sugar, and cinnamon.
Stir until the mixture forms a thick, spreadable paste.


3️⃣ Roll and Twist

Roll the dough on a lightly floured surface into a 12 × 8-inch rectangle.

Spread the cinnamon mixture evenly over the surface of the dough.

Roll the dough tightly into a log shape.
Using a sharp knife, slice the log lengthwise down the center.

Twist the two long pieces together with the cut sides facing upward.
You can shape it into a round coil or keep it as a long twisted loaf.


4️⃣ Bake

Preheat your oven to 350°F (175°C).

Place the twisted dough on a lined baking tray and bake for 25–28 minutes, until the bread becomes golden brown and aromatic.

Let it cool slightly before finishing with a dusting of powdered sugar or a drizzle of glaze.

Sourdough Flavor:
Using older sourdough discard will create a stronger tangy flavor.

Storage:

  • Room temperature: up to 2 days
  • Refrigerator: up to 5 days
  • Freezer: about 1 month (slice before freezing for easy serving)

You can mix in extra ingredients such as:

  • Chopped pecans
  • Raisins
  • Mini chocolate chips
  • A pinch of cardamom for a warm, spiced flavor twist.
