👩🍳 Instructions
1. Prepare the Batter
- In a large mixing bowl (or stand mixer bowl), combine the softened butter with both sugars.
- Beat together until smooth, light, and creamy.
- Mix in the milk, sour cream, sourdough discard, vanilla, and eggs. Stir until everything is fully incorporated and smooth.
2. Add Dry Ingredients
- In a separate bowl, whisk together flour, baking powder, salt, and cinnamon.
- Fold the dry ingredients into the wet mixture gently. Don’t overmix — a few lumps are fine.
3. Incorporate Apples
- Peel and dice the apples into your preferred size.
- For chunky, soft bites, keep larger pieces.
- For a more uniform texture that melds into the batter, chop smaller.
- Fold the apples gently into the muffin batter.
4. Prepare Muffin Pan
- Grease a muffin tray or line it with paper liners.
- Scoop about ⅓ cup of batter into each muffin cavity.
5. Make Streusel Topping
- Combine flour, sugar, and cinnamon in a small bowl.
- Cut the cold butter into the mixture using fingers or a pastry cutter until coarse crumbs form.
- Sprinkle approximately 1 tablespoon of streusel over each muffin, ensuring the tops are covered.
6. Bake
- Bake in a preheated oven at 400°F (200°C) for 17–20 minutes.
- Muffins are done when a toothpick inserted comes out clean or with a few moist crumbs.
7. Cool & Serve
- Allow muffins to rest in the pan for a few minutes.
- Transfer to a wire rack to cool completely.
- Drizzle caramel sauce over the top just before serving for a decadent touch.
💡 Tips & Tricks
- Avoid overmixing: Stir just enough to incorporate flour. Overmixing can make muffins dense.
- Cream butter thoroughly: Properly creamed butter and sugar ensures soft, airy muffins.
- Check doneness: Oven times vary; toothpick test ensures perfectly baked muffins.
- Cool before topping: Transfer muffins to a cooling rack to prevent overbaking from residual heat.
- Add caramel last: Store muffins without caramel and drizzle right before serving for freshness.
