Sourdough Apple Muffins with Cinnamon Streusel & Caramel Drizzle

Ingredients

Muffins:

  • 150g granulated sugar (¾ cup)
  • 110g brown sugar (½ cup)
  • 113g butter, softened (½ cup) 🧈
  • 60g milk (¼ cup) 🥛
  • 160g sour cream (⅔ cup)
  • 60g sourdough discard (¼ cup) 🍞
  • 5g vanilla extract (1 tsp) 🌿
  • 2 large eggs 🥚
  • 245g all-purpose flour (1¾ cups) 🌾
  • 10g baking powder (2 tsp)
  • 3g salt (½ tsp) 🧂
  • 4g cinnamon (1½ tsp)
  • 200g apples, peeled and diced (≈2 medium apples) 🍏

Streusel Topping:

  • 28g cold butter (2 tbsp) 🧈
  • 45g flour (⅓ cup)
  • 65g sugar (⅓ cup)
  • 1 tsp cinnamon

Optional:

  • Caramel sauce for drizzling 🍯

1. Prepare the Batter

  1. In a large mixing bowl (or stand mixer bowl), combine the softened butter with both sugars.
  2. Beat together until smooth, light, and creamy.
  3. Mix in the milk, sour cream, sourdough discard, vanilla, and eggs. Stir until everything is fully incorporated and smooth.

2. Add Dry Ingredients

  1. In a separate bowl, whisk together flour, baking powder, salt, and cinnamon.
  2. Fold the dry ingredients into the wet mixture gently. Don’t overmix — a few lumps are fine.

3. Incorporate Apples

  1. Peel and dice the apples into your preferred size.
    • For chunky, soft bites, keep larger pieces.
    • For a more uniform texture that melds into the batter, chop smaller.
  2. Fold the apples gently into the muffin batter.

4. Prepare Muffin Pan

  1. Grease a muffin tray or line it with paper liners.
  2. Scoop about ⅓ cup of batter into each muffin cavity.

5. Make Streusel Topping

  1. Combine flour, sugar, and cinnamon in a small bowl.
  2. Cut the cold butter into the mixture using fingers or a pastry cutter until coarse crumbs form.
  3. Sprinkle approximately 1 tablespoon of streusel over each muffin, ensuring the tops are covered.

6. Bake

  1. Bake in a preheated oven at 400°F (200°C) for 17–20 minutes.
  2. Muffins are done when a toothpick inserted comes out clean or with a few moist crumbs.

7. Cool & Serve

  1. Allow muffins to rest in the pan for a few minutes.
  2. Transfer to a wire rack to cool completely.
  3. Drizzle caramel sauce over the top just before serving for a decadent touch.
