Martini Sticks

Ingredients

  • 1 (8-ounce) block cream cheese, softened
  • 4 ounces creamy blue cheese
  • 3/4 cup pitted Castelvetrano olives, drained and coarsely chopped
  • 1/4 cup olive brine
  • 1 teaspoon finely grated lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1–2 bunches celery

Step 1: Prepare the Filling

Place the softened cream cheese in a medium mixing bowl and beat until smooth and fluffy.

Add the chopped olives, olive brine, blue cheese, salt, and black pepper. Stir until everything is evenly blended and creamy. The mixture should be thick but spreadable.

Step 2: Cut the Celery

Trim the celery stalks and slice them into sticks about 4 inches long. Pat them dry if needed to help the filling adhere better.

Step 3: Fill the Sticks

Using a small spoon, butter knife, or piping bag, fill the hollow center of each celery stick with the olive and cheese mixture. Spread evenly for a neat presentation.

Step 4: Chill Before Serving

Arrange the filled celery sticks on a serving platter. Refrigerate for at least 30 minutes to allow the filling to firm up and the flavors to meld together.

Serve well chilled and enjoy!
