Keto Blueberry Bread (Low-Carb & High-Protein)

Ingredients

  • 2 cups almond flour
  • ¼ cup coconut flour
  • ½ cup erythritol or preferred keto sweetener
  • 1 tsp baking powder
  • ½ tsp salt
  • 4 large eggs
  • ¼ cup unsweetened almond milk
  • ¼ cup melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

Step-by-Step Instructions

Step 1: Preheat Oven
Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.

Step 2: Mix Dry Ingredients
In a large bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt.

Step 3: Mix Wet Ingredients
In another bowl, whisk together eggs, almond milk, melted butter, and vanilla extract.

Step 4: Combine Wet and Dry
Pour the wet ingredients into the dry ingredients and mix until smooth.

Step 5: Fold in Blueberries
Gently fold in blueberries, being careful not to crush them.

Step 6: Pour into Loaf Pan
Transfer the batter into the prepared loaf pan and smooth the top.
