Sourdough Cornbread

Ingredients

  • 1 cup sourdough discard
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ⅓ cup granulated sugar (optional)
  • 1 cup milk (or buttermilk)
  • 2 eggs
  • ¼ cup melted butter (or oil)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

👩‍🍳 Step-by-Step Instructions

1️⃣ Preheat the Oven

Preheat oven to 190°C (375°F).
Grease an 8×8 inch baking pan or skillet.


2️⃣ Mix Wet Ingredients

In a large bowl whisk together:

  • sourdough discard
  • milk
  • eggs
  • melted butter

Mix until smooth.


3️⃣ Combine Dry Ingredients

In another bowl mix:

  • cornmeal
  • flour
  • sugar
  • baking powder
  • baking soda
  • salt

4️⃣ Make the Batter

Gradually add the dry ingredients to the wet mixture and stir until combined.
Do not overmix.


5️⃣ Pour into Pan

Pour the batter into the prepared baking pan and spread evenly.


6️⃣ Bake

Bake for 20–25 minutes or until the top is golden brown and a toothpick comes out clean.


7️⃣ Cool and Serve

Let cool slightly before slicing.

Serve warm with:
