- 1½ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon allspice
- ¾ teaspoon ground black pepper
- ¼ teaspoon cayenne pepper
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract

1️⃣ Combine Dry Ingredients
In a small bowl, sift together the flour, cocoa powder, baking powder, salt, cinnamon, allspice, black pepper, and cayenne pepper. Set aside.
2️⃣ Cream Butter and Sugar
In a large mixing bowl, beat the butter and sugar together until the mixture becomes smooth and creamy.
Add the egg and vanilla extract, then continue mixing until the batter looks light and well blended.
3️⃣ Mix the Dough
Gradually add the dry ingredients to the butter mixture. Stir until everything is just combined and forms a soft dough.
4️⃣ Chill the Dough
Cover the dough and place it in the refrigerator for about 30 minutes so it firms up and becomes easier to shape.
5️⃣ Shape the Logs
Divide the chilled dough into two portions.
Roll each portion into a log about 3 inches in diameter. Wrap the logs tightly in plastic wrap.
Place them in the freezer for 1–2 hours, or until the dough is firm.
6️⃣ Prepare for Baking
Preheat the oven to 375°F (190°C).
Line a baking tray with parchment paper.
Remove the dough logs from the freezer and slice them into ½-inch thick rounds. Arrange the cookie slices on the prepared baking sheet.
7️⃣ Bake
Bake the cookies for 9–11 minutes.
They will continue to firm up as they cool.
8️⃣ Cool and Store
Allow the cookies to cool completely on a rack.
Store them in an airtight container to keep them fresh.
