Ingredients
- 2 smoked sausages (sliced)
- 1 can (400g) white beans (cannellini or navy), drained
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 2 cups spinach or kale
- 2 tbsp olive oil
- 1/2 cup chicken broth
- 1 tsp paprika
- 1/2 tsp dried oregano
- Salt & black pepper (to taste)
- Red chili flakes (optional ๐ถ๏ธ)
๐จโ๐ณ Instructions
1. Brown the Sausage
- Heat olive oil in a large skillet
- Add sliced sausage
- Cook until nicely browned (4โ5 mins)
2. Sautรฉ Aromatics
- Add onion and cook until soft
- Stir in garlic, cook for 30 seconds
3. Build Flavor
- Add tomatoes, paprika, oregano
- Cook until tomatoes soften
4. Add Beans & Broth
- Stir in white beans and chicken broth
- Simmer 5โ7 minutes
5. Finish
- Add spinach/kale and cook until wilted
- Adjust salt, pepper, chili flakes

- Finish with grated parmesan ๐ง for extra richness
- Serve with crusty bread or over rice ๐๐
- Add a squeeze of lemon for freshness
