Tofu Burritos

Ingredients

  • 1 block firm tofu (pressed & crumbled)
  • 4 large tortillas
  • 1 cup cooked rice (or cauliflower rice for low-carb)
  • 1/2 cup black beans (optional)
  • 1/2 cup corn
  • 1 bell pepper (sliced)
  • 1/2 onion (sliced)
  • 2 tbsp olive oil

๐ŸŒถ๏ธ Seasoning

  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt & black pepper (to taste)
  • 1 tbsp soy sauce

๐Ÿฅ‘ Toppings

  • Avocado slices or guacamole
  • Salsa
  • Lettuce
  • Vegan or regular cheese
  • Sour cream or yogurt

๐Ÿ‘จโ€๐Ÿณ Instructions

1. Cook Tofu

  • Heat oil in a pan
  • Add crumbled tofu
  • Add soy sauce + all spices
  • Cook 6โ€“8 minutes until slightly crispy

2. Cook Veggies

  • In the same pan, sautรฉ onion & bell pepper
  • Add corn and beans, cook 3โ€“4 minutes

3. Warm Tortillas

  • Heat tortillas on a pan for a few seconds

4. Assemble Burritos

  • Add rice โ†’ tofu โ†’ veggies
  • Top with avocado, salsa, cheese, etc.

5. Wrap

  • Fold sides, roll tightly into a burrito ๐ŸŒฏ

  • Add hot sauce for extra kick ๐Ÿ”ฅ
  • Use whole wheat or low-carb tortillas
  • Grill the wrapped burrito for crispy outside ๐Ÿ˜‹
