Strawberry Icebox Cake

Ingredients

  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1 pack graham crackers (or vanilla wafers)

Step-by-Step Instructions

1. Make the Whipped Cream

In a large bowl beat:

  • Heavy whipping cream
  • Powdered sugar
  • Vanilla extract

Beat until soft peaks form and the cream becomes fluffy.

2. Prepare the Dish

Take a 9×9 inch dish or similar baking dish.

3. First Layer

Place a layer of graham crackers at the bottom of the dish.

4. Add Cream Layer

Spread a layer of whipped cream evenly over the crackers.

5. Add Strawberries

Place a layer of sliced strawberries over the cream.

6. Repeat the Layers

Repeat the layers:

  • Graham crackers
  • Whipped cream
  • Strawberries

Continue until the dish is full, finishing with cream and strawberries on top.

7. Chill the Cake

Cover and refrigerate for 4–6 hours or overnight.
This allows the crackers to soften into a cake-like texture.

8. Serve

Slice and serve chilled for a cool, creamy dessert.


Tip:
Drizzle a little strawberry syrup or melted chocolate on top for extra flavor.
