Sourdough Strawberry Shortcake

Ingredients

For the Shortcake

  • 1 cup sourdough discard
  • 1½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup cold butter (cubed)
  • ½ cup milk
  • 1 tsp vanilla extract

For the Strawberry Filling

  • 2 cups fresh strawberries (sliced)
  • 2 tbsp sugar

For the Topping

  • 1 cup whipped cream

👩‍🍳 Step-by-Step Instructions

1️⃣ Prepare the Strawberries

In a bowl mix:

  • sliced strawberries
  • sugar

Let them sit for 15–20 minutes to release their juices.


2️⃣ Preheat the Oven

Preheat oven to 190°C (375°F).
Line a baking tray with parchment paper.


3️⃣ Mix Dry Ingredients

In a bowl combine:

  • flour
  • sugar
  • baking powder
  • salt

4️⃣ Add Butter

Add cold butter cubes and rub them into the flour mixture until it looks like crumbs.


5️⃣ Add Wet Ingredients

Mix in:

  • sourdough discard
  • milk
  • vanilla extract

Stir until a soft dough forms.


6️⃣ Shape the Shortcakes

Drop or shape the dough into 6 small rounds on the baking tray.


7️⃣ Bake

Bake for 15–18 minutes until lightly golden.


8️⃣ Assemble the Shortcake

  • Slice each shortcake in half
  • Add strawberries and their juice
  • Top with whipped cream
  • Place the other half on top

9️⃣ Serve

Serve immediately for the best taste.
