Sourdough Butter Crackers

Ingredients

  • 1 cup sourdough discard
  • 1 cup all-purpose flour
  • ½ tsp salt
  • 4 tbsp cold unsalted butter (cut into small pieces)
  • 1–2 tbsp cold water (as needed)
  • Optional: sea salt flakes for topping

👩‍🍳 Step-by-Step Instructions

1️⃣ Preheat Oven

Preheat oven to 175°C (350°F).
Line a baking sheet with parchment paper.


2️⃣ Mix Dry Ingredients

In a bowl, whisk together:

  • flour
  • salt

3️⃣ Cut in Butter

Add cold butter pieces and use a pastry cutter or fingers to mix until the mixture looks like coarse crumbs.


4️⃣ Add Sourdough and Water

Add sourdough discard and mix gently.
Add cold water 1 tablespoon at a time until the dough comes together.


5️⃣ Roll Out Dough

On a floured surface, roll the dough very thin (about 1/8 inch).
Cut into squares or desired shapes using a knife or cookie cutter.


6️⃣ Arrange and Season

Place crackers on the baking sheet spaced slightly apart.
Sprinkle lightly with sea salt flakes if desired.


7️⃣ Bake

Bake for 15–20 minutes or until golden and crispy.


8️⃣ Cool and Store

Let crackers cool completely on a wire rack.
Store in an airtight container.
