Sourdough Apple Cider Muffins

Ingredients

  • 1 cup sourdough starter (active or discard)
  • 1 cup Apple cider 🍎
  • 1 ½ cups all-purpose flour
  • ½ cup brown sugar
  • ¼ cup melted butter 🧈
  • 1 egg 🥚
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup finely chopped apple (optional)

Topping (optional):

  • 2 tablespoons sugar
  • ½ teaspoon cinnamon

Step-by-Step Instructions

Step 1:
Preheat the oven to 375°F (190°C) and line a muffin tray with paper liners.

Step 2:
In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

Step 3:
In another bowl, mix sourdough starter, apple cider, brown sugar, melted butter, egg, and vanilla extract.

Step 4:
Slowly add the dry ingredients into the wet mixture and stir until combined.

Step 5:
Fold in the chopped apples for extra flavor and texture.

Step 6:
Fill each muffin cup about ¾ full with batter.

Step 7:
Mix sugar and cinnamon and sprinkle on top of the muffins.

Step 8:
Bake for 18–22 minutes until a toothpick inserted in the center comes out clean.

Step 9:
Let the muffins cool for 5–10 minutes, then serve warm.
