🧾 Ingredients

  • 2 eggs
  • ½ cup (100 g) granulated sugar
  • ¼ teaspoon vanilla extract
  • ½ cup (100 g) butter, softened
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1½–2 cups (250–300 g) all-purpose flour
  • 2 apples, peeled, cored, and chopped into small cubes
  • Powdered sugar (optional, for topping)

👩‍🍳 Instructions

1️⃣ Preheat the Oven

Set your oven to 350°F (175°C).
Line a baking tray with parchment paper or a silicone baking mat to keep the cookies from sticking.


2️⃣ Prepare the Wet Mixture

In a large bowl, whisk together the eggs, sugar, and vanilla extract until the mixture becomes smooth and slightly lighter in color.

Add the softened butter and continue mixing until the batter turns creamy and well blended. This helps create the cookies’ rich and tender texture.


3️⃣ Add the Dry Ingredients

Mix in the baking powder and salt.
Gradually add the flour in portions, starting with 1½ cups. Stir until a soft dough forms.

If the dough still feels too sticky, add a little more flour until it becomes soft but easy to scoop.


4️⃣ Fold in the Apples

Peel and core the apples, then cut them into small cubes.

Gently fold the apple pieces into the dough so they are evenly spread throughout the mixture. The apples add natural sweetness and a juicy texture.


5️⃣ Shape the Cookies

Using a tablespoon or a cookie scoop, drop small portions of dough onto the prepared baking sheet.

Leave about 2 inches of space between each cookie because they will spread slightly while baking.


6️⃣ Bake

Place the tray in the oven and bake for 18–20 minutes, or until the edges turn lightly golden and the cookies feel set.

Allow them to cool on the baking sheet for about 5 minutes, then move them to a wire rack to cool completely.


7️⃣ Optional Finishing Touch

Once the cookies have cooled, sprinkle a light layer of powdered sugar over the top for a simple bakery-style finish.
