Wet Ingredients

  • 1 cup grated zucchini (excess moisture squeezed out)
  • 2 large eggs
  • 1 cup plain Greek yogurt (or sour cream)
  • ¼ cup olive oil (or melted butter)
  • ½ cup milk (dairy or plant-based)
  • 1 cup shredded cheddar cheese (or a mix of mozzarella and parmesan)

Optional Add-Ins

  • 2 tablespoons chopped green onions or chives
  • ¼ cup finely chopped spinach or parsley
  • 2 tablespoons grated parmesan for topping

1️⃣ Prepare the Zucchini

Wash the zucchini and grate it using the coarse side of a grater.
Place the grated zucchini in a clean towel or paper towel and squeeze firmly to remove as much liquid as possible.

2️⃣ Heat the Oven

Preheat your oven to 375°F (190°C).
