Step-by-Step Recipe
Step 1: Make Dough
In a bowl, mix sourdough discard, warm water, sugar, and yeast. Add flour and salt, then knead until a soft dough forms.
Step 2: Let it Rise
Cover the dough and let it rest for about 1 hour, or until slightly puffy.
Step 3: Shape Bites
Divide the dough into small portions. Roll into ropes and cut into bite-sized pieces.
Step 4: Baking Soda Bath
Boil water and add baking soda. Drop the dough pieces in for about 20–30 seconds, then remove.
Step 5: Bake
Place on a lined tray, sprinkle salt if desired, and bake at 200°C (400°F) for 12–15 minutes until golden brown.
Step 6: Finish
Brush with melted butter and serve warm.
