Pesto Grilled Shrimp – Quick, Healthy & Flavorful

Ingredients

  • 500g large shrimp, peeled and deveined
  • 3 tbsp basil pesto (homemade or store-bought)
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp lemon juice
  • Fresh basil leaves, for garnish

Step-by-Step Recipe

Step 1:
In a bowl, combine shrimp, pesto, olive oil, garlic, salt, pepper, and lemon juice. Mix well and marinate for 15–20 minutes.

Step 2:
Preheat a grill pan or outdoor grill over medium-high heat.

Step 3:
Skewer the shrimp (optional, for easier grilling).

Step 4:
Place shrimp on the grill and cook for 2–3 minutes per side, until pink, opaque, and slightly charred.

Step 5:
Remove shrimp from grill and transfer to a serving plate.

Step 6:
Garnish with fresh basil leaves and a squeeze of extra lemon juice.

Step 7:
Serve immediately with a side of salad, cauliflower rice, or roasted vegetables.


Tip:
For extra flavor, brush a little pesto on the shrimp during the last minute of grilling.
