Keto Pancakes

Ingredients

  • 1 cup almond flour
  • 2 eggs
  • 2 tbsp cream cheese (softened)
  • 1 tbsp butter (melted)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1–2 tbsp keto sweetener (erythritol or stevia)
  • Pinch of salt

1. Make Batter

  • In a bowl, whisk eggs + cream cheese until smooth
  • Add almond flour, baking powder, sweetener, vanilla, and salt
  • Mix until a thick batter forms

2. Cook Pancakes

  • Heat a non-stick pan over medium-low heat
  • Add a little butter or oil
  • Pour small amounts of batter (keto pancakes are delicate)

  • 2–3 minutes on one side
  • Flip carefully and cook another 1–2 minutes

3. Serve
