- 1 lb ground beef (or ground chicken/turkey)
- 1 tbsp olive oil
- 1 tbsp taco seasoning
- 4 cups chopped romaine lettuce
- 1 cup cherry tomatoes (halved)
- ½ cup shredded cheddar cheese
- ½ cup canned black beans (rinsed and drained)
- ½ cup corn kernels
- ½ avocado (diced)
- ¼ cup sour cream or Greek yogurt
- 2 tbsp salsa
- Tortilla chips or crushed taco shells (optional)
Step-by-Step Recipe
Step 1:
Heat olive oil in a skillet over medium heat. Add ground beef and cook for about 5–7 minutes until browned.
Step 2:
Add taco seasoning and a few tablespoons of water. Stir well and cook for another 2–3 minutes until the meat is well coated.
Step 3:
In a large bowl, add chopped romaine lettuce as the base.
Step 4:
Top the lettuce with cooked taco meat, cherry tomatoes, black beans, and corn.
Step 5:
Sprinkle shredded cheddar cheese and diced avocado over the salad.
Step 6:
Add sour cream (or Greek yogurt) and salsa on top as dressing.
Step 7:
Finish by adding crushed tortilla chips or taco shells for crunch and serve immediately.
