Ingredients
For the Filling:
- 4 medium zucchinis, halved and hollowed
- 250g ground beef or turkey
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- ½ tsp cumin
- ½ tsp paprika
- ½ tsp oregano
- Salt & pepper, to taste
- 2 tbsp olive oil
- ¼ cup shredded mozzarella or cheddar cheese
Optional Garnish:
- Chopped parsley or cilantro
- Sliced red bell peppers
Step-by-Step Recipe
Step 1:
Preheat oven to 180°C (350°F).
Step 2:
Slice the zucchinis in half lengthwise and scoop out the flesh, leaving a shell about ½ inch thick. Set aside the scooped zucchini flesh.
Step 3:
In a pan, heat olive oil, sauté onion and garlic until fragrant.
Step 4:
Add ground beef or turkey, cook until browned.
Step 5:
Add tomato, zucchini flesh, cumin, paprika, oregano, salt, and pepper. Cook for 5–7 minutes, until slightly thickened.
Step 6:
Fill each zucchini half with the meat mixture.
Step 7:
Sprinkle shredded cheese on top of each stuffed zucchini.
Step 8:
Place stuffed zucchinis on a baking dish and bake for 15–20 minutes, until cheese melts and slightly golden.
Step 9:
Garnish with parsley or cilantro and sliced bell peppers. Serve hot.
Tip:
For a creamier filling, you can add 1–2 tbsp cream cheese into the meat mixture before stuffing.
