Chorizo and Halloumi Stack

Ingredients:

  • 2 slices sourdough bread
  • 150g chorizo sausage, sliced
  • 150g halloumi cheese, sliced
  • 2 eggs
  • 1 ripe avocado
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Fresh chives (chopped)
  • Chili oil or hot sauce (optional)
  • Crispy bacon bits (optional garnish)

Step-by-Step Recipe:

  1. Prepare the avocado mash
    Mash the avocado with lemon juice, salt, and pepper until creamy. Set aside.
  2. Toast the bread
    Toast the sourdough slices until golden and crispy.
  3. Cook the chorizo
    Heat a pan over medium heat and cook the chorizo slices until slightly crispy and aromatic. Remove and set aside.
  4. Cook the halloumi
    In the same pan, add halloumi slices and cook until golden brown on both sides.
  5. Poach the eggs
    Bring water to a gentle simmer, add a splash of vinegar, and poach the eggs for about 3–4 minutes until whites are set and yolks are soft.
  6. Assemble the stack
    Spread avocado mash on toast, layer halloumi, then chorizo slices.
  7. Add the eggs
    Place poached eggs on top.
  8. Garnish and serve
    Drizzle chili oil, sprinkle chives and bacon bits, and serve immediately.
