- 1 medium head cauliflower (cut into small florets)
- 1 lb ground beef or Italian sausage
- 2 cups low-carb marinara sauce
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese

Step-by-Step Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
Step 2: Cook the Cauliflower
Bring a pot of salted water to a boil. Add cauliflower florets and cook for 4–5 minutes until slightly tender. Drain well and set aside.
Step 3: Cook the Meat
Heat olive oil in a skillet over medium heat. Add ground beef or sausage and cook for 5–7 minutes until browned. Add minced garlic and cook for another 1 minute.
Step 4: Add the Sauce
Stir in marinara sauce, Italian seasoning, salt, and black pepper. Let it simmer for 3–4 minutes.
Step 5: Layer the Casserole
In the baking dish, spread half of the cauliflower. Add half of the meat sauce, then dollops of ricotta and a sprinkle of mozzarella. Repeat the layers.
Step 6: Add the Cheese Topping
Top with the remaining mozzarella and grated parmesan cheese.
Step 7: Bake
Bake in the oven for 20–25 minutes until the cheese is melted, bubbly, and golden.
Step 8: Serve
Let it rest for 5 minutes, garnish with fresh basil or parsley, and serve warm.
