Ingredients
- 1 medium head cauliflower (or 4 cups cauliflower rice)
- 2 tablespoons oil (olive or sesame oil)
- 2 eggs (lightly beaten)
- 3 cloves garlic (minced)
- ½ cup chopped onion
- ½ cup diced carrots
- ½ cup peas
- 2–3 tablespoons soy sauce
- 1 teaspoon sesame oil (optional)
- Salt & black pepper (to taste)
- 2 green onions (chopped)
👩🍳 Step-by-Step Instructions
1️⃣ Make Cauliflower Rice
Cut cauliflower into florets and pulse in a food processor until it looks like rice.
(Or grate using a box grater.)
2️⃣ Cook the Eggs
Heat 1 tablespoon oil in a large pan or wok over medium heat.
Add beaten eggs, scramble, then remove and set aside.
3️⃣ Sauté Vegetables
In the same pan, add remaining oil.
Sauté onion and garlic for 1–2 minutes.
Add carrots and peas, cook 3–4 minutes until slightly tender.
4️⃣ Add Cauliflower
Stir in cauliflower rice. Cook for 5–6 minutes, stirring occasionally.
Do not overcook — it should stay slightly firm, not mushy.
5️⃣ Season
Add soy sauce, sesame oil, salt, and pepper.
Mix well.
6️⃣ Combine
Return scrambled eggs to the pan.
Stir everything together and cook 1–2 more minutes.
7️⃣ Garnish & Serve
Top with green onions and serve hot.
