Broccoli Cheese Soup (Keto, Low-Carb & Creamy Comfort)

Ingredients:

  • 2 tbsp butter or olive oil
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 3 cups broccoli florets
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese
  • 1/2 cup cream cheese (optional, for extra creaminess)
  • Salt & black pepper (to taste)
  • 1/4 tsp paprika (optional)

👩‍🍳 Step-by-Step Instructions:

Step 1: Melt butter
In a large pot, melt butter over medium heat.

Step 2: Sauté onion
Add chopped onion and cook for 3–4 minutes until soft. Stir in garlic and cook for 30 seconds.

Step 3: Add broccoli & broth
Add broccoli florets and pour in broth. Bring to a boil, then reduce heat and simmer for 10–15 minutes until broccoli is tender.

Step 4: Blend (optional)
For a smooth texture, blend the soup using a hand blender. For chunky soup, skip this step.

Step 5: Add cream
Stir in heavy cream and mix well.

Step 6: Add cheese
Gradually add shredded cheddar cheese and stir until fully melted. Add cream cheese if using.

Step 7: Season & simmer
Add salt, pepper, and paprika. Let it simmer for 5 minutes until thick and creamy.
