Ingredients (serves 2–3)
- 2 large bell peppers (red, yellow, or green), sliced into chips
- 1 cup shredded cheddar cheese (or mozzarella)
- ½ cup cooked ground beef or chicken (optional, for protein)
- 2 tbsp sour cream
- 2 tbsp diced tomatoes
- 1 tbsp sliced black olives
- 1 tsp chili powder
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and pepper, to taste
- Fresh cilantro or green onions, for garnish
Instructions
- Preheat oven: Set to 400°F (200°C).
- Prepare bell peppers: Slice bell peppers into chip-like strips. Lay them flat on a baking tray lined with parchment paper.
- Season: Sprinkle chili powder, garlic powder, paprika, salt, and pepper over the peppers.
- Add toppings: Spread cooked ground beef or chicken evenly over the peppers (if using). Sprinkle shredded cheese generously on top.
- Bake: Place in the oven for 8–10 minutes, until cheese is melted and bubbly.
- Finish: Remove from oven and top with diced tomatoes, black olives, sour cream, and fresh cilantro or green onions.
- Serve immediately: Enjoy warm, crispy, low-carb nachos!
