Bell Pepper Keto Nachos

Ingredients (serves 2–3)

  • 2 large bell peppers (red, yellow, or green), sliced into chips
  • 1 cup shredded cheddar cheese (or mozzarella)
  • ½ cup cooked ground beef or chicken (optional, for protein)
  • 2 tbsp sour cream
  • 2 tbsp diced tomatoes
  • 1 tbsp sliced black olives
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper, to taste
  • Fresh cilantro or green onions, for garnish

Instructions

  1. Preheat oven: Set to 400°F (200°C).
  2. Prepare bell peppers: Slice bell peppers into chip-like strips. Lay them flat on a baking tray lined with parchment paper.
  3. Season: Sprinkle chili powder, garlic powder, paprika, salt, and pepper over the peppers.
  4. Add toppings: Spread cooked ground beef or chicken evenly over the peppers (if using). Sprinkle shredded cheese generously on top.
  5. Bake: Place in the oven for 8–10 minutes, until cheese is melted and bubbly.
  6. Finish: Remove from oven and top with diced tomatoes, black olives, sour cream, and fresh cilantro or green onions.
  7. Serve immediately: Enjoy warm, crispy, low-carb nachos!
