Sourdough Discard Strawberry Shortcake Bars

Ingredients

For the crust:

  • 1 cup all-purpose flour
  • ¼ cup sugar
  • ½ cup cold butter (cubed)
  • ¼ cup sourdough discard

For the filling:

  • 1½ cups fresh strawberries (chopped)
  • ¼ cup sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice

For the topping:

  • 1 cup whipped cream (or whipped topping)
  • Extra strawberries for garnish

👩‍🍳 Step-by-Step Recipe

1. Prepare the Crust

Preheat oven to 180°C (350°F).
Mix flour and sugar, then rub in cold butter until crumbly. Add sourdough discard and mix to form a dough.


2. Bake the Base

Press the dough into a lined baking pan.
Bake for 15–18 minutes until lightly golden. Let it cool.


3. Make Strawberry Filling

In a pan, cook strawberries, sugar, cornstarch, and lemon juice on medium heat.
Stir until thick and jam-like. Let it cool completely.


4. Assemble Layers

Spread the strawberry filling over the cooled crust evenly.


5. Add Cream Layer

Top with whipped cream and smooth it out nicely.


6. Chill

Refrigerate for at least 2 hours so the bars set properly.


7. Slice & Serve

Cut into squares and garnish with fresh strawberries.
