Spinach Banana Sourdough Muffins

Ingredients

  • 1 cup sourdough starter (active or discard)
  • 2 ripe bananas (mashed)
  • 1 cup fresh spinach (finely chopped or blended)
  • 1/2 cup sugar or honey
  • 1/3 cup oil or melted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Step-by-Step Guide

Step 1: Prep
Preheat your oven to 180°C (350°F). Line a muffin tray with paper liners or lightly grease it.

Step 2: Mix Wet Ingredients
In a large bowl, mash the bananas. Add sourdough starter, sugar (or honey), oil, egg, and vanilla extract. Mix well until smooth.

Step 3: Add Spinach
Stir in the chopped or blended spinach until evenly combined.

Step 4: Combine Dry Ingredients
In another bowl, mix flour, baking soda, salt, and cinnamon.

Step 5: Make Batter
Gradually add the dry ingredients into the wet mixture. Stir gently until just combined (don’t overmix).

Step 6: Fill Muffin Cups
Pour the batter into the muffin tray, filling each cup about 3/4 full.

Step 7: Bake
Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
