White Bean & Smoked Sausage Skillet

Ingredients

  • 2 smoked sausages (sliced)
  • 1 can (400g) white beans (cannellini or navy), drained
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 2 cups spinach or kale
  • 2 tbsp olive oil
  • 1/2 cup chicken broth
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • Salt & black pepper (to taste)
  • Red chili flakes (optional ๐ŸŒถ๏ธ)

1. Brown the Sausage

  • Heat olive oil in a large skillet
  • Add sliced sausage
  • Cook until nicely browned (4โ€“5 mins)

2. Sautรฉ Aromatics

  • Add onion and cook until soft
  • Stir in garlic, cook for 30 seconds

3. Build Flavor

  • Add tomatoes, paprika, oregano
  • Cook until tomatoes soften

4. Add Beans & Broth

  • Stir in white beans and chicken broth
  • Simmer 5โ€“7 minutes

5. Finish

  • Add spinach/kale and cook until wilted
  • Adjust salt, pepper, chili flakes
