Ingredients
- 1 block firm tofu (pressed & crumbled)
- 4 large tortillas
- 1 cup cooked rice (or cauliflower rice for low-carb)
- 1/2 cup black beans (optional)
- 1/2 cup corn
- 1 bell pepper (sliced)
- 1/2 onion (sliced)
- 2 tbsp olive oil
๐ถ๏ธ Seasoning
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- Salt & black pepper (to taste)
- 1 tbsp soy sauce
๐ฅ Toppings
- Avocado slices or guacamole
- Salsa
- Lettuce
- Vegan or regular cheese
- Sour cream or yogurt
๐จโ๐ณ Instructions
1. Cook Tofu
- Heat oil in a pan
- Add crumbled tofu
- Add soy sauce + all spices
- Cook 6โ8 minutes until slightly crispy
2. Cook Veggies
- In the same pan, sautรฉ onion & bell pepper
- Add corn and beans, cook 3โ4 minutes
3. Warm Tortillas
- Heat tortillas on a pan for a few seconds
4. Assemble Burritos
- Add rice โ tofu โ veggies
- Top with avocado, salsa, cheese, etc.
5. Wrap
- Fold sides, roll tightly into a burrito ๐ฏ
๐ก Tips
- Add hot sauce for extra kick ๐ฅ
- Use whole wheat or low-carb tortillas
- Grill the wrapped burrito for crispy outside ๐
