Keto Beef Stew (Low-Carb, High-Protein Comfort Meal)

Ingredients:

  • 500g beef stew meat (cut into chunks)
  • 2 tbsp olive oil
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 2 cups beef broth
  • 1/2 cup tomatoes (diced or crushed)
  • 1 cup cauliflower florets
  • 1 zucchini (chopped)
  • 1/2 cup mushrooms (sliced)
  • 1 tsp paprika
  • 1/2 tsp thyme
  • 1/2 tsp rosemary
  • Salt & black pepper (to taste)
  • 1/2 tsp xanthan gum (optional, for thickening)

👩‍🍳 Step-by-Step Instructions:

Step 1: Brown the beef
Heat olive oil in a large pot over medium-high heat. Add beef chunks, season with salt and pepper, and sear until browned on all sides. Remove and set aside.

Step 2: Cook aromatics
In the same pot, add chopped onion and cook for 3–4 minutes until softened. Add garlic and sauté for 30 seconds.

Step 3: Add spices
Stir in paprika, thyme, rosemary, salt, and pepper to enhance flavor.

Step 4: Deglaze & add liquids
Pour in beef broth and tomatoes, scraping the bottom of the pot to release flavorful bits.

Step 5: Return beef
Add the browned beef back into the pot and mix well.

Step 6: Simmer
Cover and let it simmer on low heat for 30–40 minutes until the beef becomes tender.

Step 7: Add vegetables
Add cauliflower, zucchini, and mushrooms. Cook for another 15–20 minutes until veggies are soft.

Step 8: Thicken (optional)
Sprinkle xanthan gum and stir well. Let it simmer for 5 more minutes until thickened.
