Ingredients:
- 200g block of feta cheese
- 2 cups cherry tomatoes
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- 1 tsp dried oregano
- ½ tsp chili flakes (optional) 🌶️
- Salt & black pepper (to taste)
- 200g keto-friendly pasta (like zucchini noodles or shirataki noodles)
- Fresh basil leaves (for garnish) 🌿
👩🍳 Instructions:
- Preheat oven to 200°C (400°F).
- Prepare baking dish:
Add cherry tomatoes, garlic, olive oil, oregano, chili flakes, salt, and pepper. Mix well.
- Add feta:
Place the block of feta cheese in the center of the dish.
- Bake:
Bake for 20–25 minutes until tomatoes are soft and feta is slightly golden.
- Cook keto pasta:
While baking, cook your keto pasta according to instructions (or sauté zucchini noodles lightly).
- Mix everything:
Remove dish from oven and mash the feta and tomatoes together to create a creamy sauce.
- Combine:
Add cooked keto pasta into the sauce and mix well.
- Garnish & serve:
Top with fresh basil and serve ho
