Broccoli Rice Casserole

Ingredients:

  • 2 cups cooked rice 🍚
  • 2 cups broccoli florets (fresh or frozen) 🥦
  • 1 cup shredded cheddar cheese 🧀
  • 1 cup cream of mushroom or cream of chicken soup
  • ½ cup milk 🥛
  • ½ cup chopped onion 🧅
  • 2 tablespoons butter 🧈
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • ½ cup breadcrumbs (optional for topping)

Step-by-Step Instructions

Step 1:
Preheat your oven to 180°C (350°F).

Step 2:
Cook the broccoli in boiling water for 3–4 minutes until slightly tender. Drain and set aside.

Step 3:
In a pan, melt butter and sauté the chopped onion for about 2–3 minutes until soft.

Step 4:
In a large bowl, mix:

  • cooked rice
  • broccoli
  • sautéed onion
  • cream soup
  • milk
  • garlic powder
  • salt and pepper

Step 5:
Add ¾ cup of the shredded cheese and mix everything well.

Step 6:
Transfer the mixture into a greased baking dish.

Step 7:
Sprinkle the remaining cheese and breadcrumbs on top.

Step 8:
Bake in the oven for 25–30 minutes until the casserole is hot and the top is golden.

Step 9:
Let it cool for 5 minutes, then serve warm and enjoy! 😋🥦🧀
