Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup diced tomatoes (drained)
  • 1 cup cauliflower rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup sour cream
  • Fresh cilantro (optional for garnish)

Step-by-Step Instructions

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Step 2: Cook the Ground Beef
Heat olive oil in a skillet over medium heat. Add ground beef and cook for 5–7 minutes, breaking it apart until browned.

Step 3: Add Aromatics
Add chopped onion and minced garlic. Cook for 2–3 minutes until softened and fragrant.
