Sourdough Chocolate Chip Muffins

Ingredients

  • 1 cup sourdough discard
  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup melted butter (or vegetable oil)
  • 2 eggs
  • ½ cup milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup chocolate chips

👩‍🍳 Step-by-Step Instructions

1️⃣ Preheat the Oven

Preheat oven to 180°C (350°F).
Line a muffin tin with paper liners or lightly grease it.


2️⃣ Mix Wet Ingredients

In a large bowl whisk together:

  • sourdough discard
  • melted butter (or oil)
  • eggs
  • milk
  • vanilla extract
  • granulated sugar
  • brown sugar

Mix until smooth.


3️⃣ Combine Dry Ingredients

In another bowl mix:

  • flour
  • baking powder
  • baking soda
  • salt

4️⃣ Make the Batter

Gradually add the dry ingredients to the wet mixture and mix gently.
Do not overmix.


5️⃣ Add Chocolate Chips

Fold in the chocolate chips evenly into the batter.


6️⃣ Fill Muffin Cups

Spoon the batter into the muffin cups, filling them about ¾ full.


7️⃣ Bake

Bake for 18–22 minutes or until a toothpick inserted comes out clean.


8️⃣ Cool and Serve

Let muffins cool for 5–10 minutes, then transfer to a rack.
