Sourdough Crepes

Ingredients

  • 1 cup sourdough discard
  • 2 eggs
  • 1 cup milk
  • 2 tbsp melted butter
  • ½ cup all-purpose flour
  • 1 tbsp sugar (optional for sweet crepes)
  • ¼ tsp salt
  • 1 tsp vanilla extract (optional)

Step-by-Step Instructions

1️⃣ Mix Wet Ingredients

In a large bowl whisk together:

  • sourdough discard
  • eggs
  • milk
  • melted butter
  • vanilla extract

Mix until smooth.


2️⃣ Add Dry Ingredients

Add:

  • flour
  • sugar
  • salt

Whisk until you get a thin, smooth batter.


3️⃣ Rest the Batter

Let the batter rest for 10–15 minutes.
This helps the crepes become soft and tender.


4️⃣ Heat the Pan

Heat a non-stick pan over medium heat and lightly grease it with butter.


5️⃣ Cook the Crepes

  • Pour about ¼ cup batter into the pan.
  • Swirl the pan to spread the batter thin.
  • Cook for 1–2 minutes until edges lift.
  • Flip and cook the other side for 30–60 seconds.

6️⃣ Serve

Serve warm with toppings like:
