Ingredients
- 1 lb ground beef (or a mix of beef and pork)
- 1 large egg
- ½ cup grated parmesan cheese
- ¼ cup almond flour (or crushed pork rinds)
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and black pepper (to taste)
- 2 tbsp olive oil (for pan-frying)
- 1 cup low-carb marinara sauce
Step-by-Step Recipe
Step 1:
Preheat oven to 375°F (190°C) (if finishing in the oven).
Step 2:
In a large bowl, combine ground meat, egg, parmesan, almond flour, garlic, Italian seasoning, salt, and pepper. Mix until just combined.
Step 3:
Form the mixture into 1.5-inch meatballs and place them on a plate or baking sheet.
Step 4:
Heat olive oil in a skillet over medium heat. Add meatballs and sear on all sides for 3–4 minutes until browned.
Step 5:
Reduce heat, pour in marinara sauce, cover, and simmer for 10–12 minutes until meatballs are cooked through.
(Optional: Transfer to oven-safe dish and bake for 10 minutes for extra tenderness.)
Step 6:
Serve hot, garnished with fresh basil or parsley.
