- 2 cups marinara sauce (low-carb)

- 1 cup ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 2 medium zucchini (thinly sliced lengthwise)
Step-by-Step Recipe
Step 1:
Preheat your oven to 375°F (190°C).
Step 2:
Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
Step 3:
Add marinara sauce, garlic powder, Italian seasoning, salt, and pepper. Stir well and let it simmer for about 5 minutes.
Step 4:
In a bowl, mix ricotta cheese with the egg and half of the parmesan cheese until smooth.
Step 5:
Slice zucchini thinly lengthwise to create lasagna “noodles.”
Step 6:
In a baking dish, spread a thin layer of meat sauce on the bottom.

Add a layer of zucchini slices, then spread some ricotta mixture, followed by meat sauce and mozzarella cheese.

Repeat the layers until all ingredients are used, finishing with mozzarella and the remaining parmesan on top.
