Ingredients
For the Blueberry Filling
- 3 cups fresh or frozen blueberries
- ½ cup sugar
- 1 tablespoon lemon juice

- ½ teaspoon vanilla extract
For the Cobbler Topping
- 1 cup all-purpose flour
- ½ cup sourdough starter (discard works well)
- ¼ cup sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup milk
- 3 tablespoons melted butter
Step-by-Step Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Prepare the Blueberry Filling
In a bowl mix:
- Blueberries
- Sugar
- Lemon juice
- Cornstarch
- Vanilla extract
Pour the mixture into a greased baking dish.
3. Make the Cobbler Batter
In another bowl whisk together:
- Flour
- Sugar
- Baking powder
- Salt
Add:
- Sourdough starter
- Milk
- Melted butter
Mix until a thick batter forms.
4. Assemble the Cobbler
Spoon the batter evenly over the blueberry mixture. It doesn’t need to fully cover the berries.

Place the dish in the oven and bake for 35–40 minutes until the topping is golden brown and the blueberries are bubbly.
6. Cool and Serve
Let the cobbler cool for 10 minutes before serving.
