Keto Mac & Cheese

Ingredients

  • 1 large head cauliflower (cut into florets)
  • 1 cup heavy cream
  • 1½ cups shredded cheddar cheese
  • ½ cup mozzarella cheese
  • 2 tablespoons cream cheese
  • 1 tablespoon butter
  • ½ teaspoon garlic powder
  • ½ teaspoon mustard powder (optional)
  • Salt & black pepper (to taste)

👩‍🍳 Step-by-Step Instructions

1️⃣ Cook the Cauliflower

Boil salted water in a pot.
Add cauliflower florets and cook for 6–8 minutes until just tender (not mushy).
Drain well and pat dry to remove extra moisture.

2️⃣ Make the Cheese Sauce

In a saucepan over medium-low heat:

  • Melt butter
  • Add heavy cream and cream cheese
  • Stir until smooth

Add garlic powder, mustard powder, salt, and pepper.

3️⃣ Add the Cheese

Gradually stir in cheddar and mozzarella.
Keep stirring until melted and creamy.

4️⃣ Combine

Add cooked cauliflower into the cheese sauce.
Mix gently to coat evenly.

5️⃣ Optional Baked Version

Transfer to a baking dish.
Top with extra cheese and bake at 375°F (190°C) for 10–15 minutes until bubbly and golden.
