For the Dough
- 1 cup sourdough discard (about 240 g)
- 1½ cups all-purpose flour (about 190 g)
- 1 tsp salt
- 1 tsp sugar
- 1 tsp instant yeast (optional, for a quicker rise)
- ¾ cup warm water
- 1 tbsp olive oil (plus extra for brushing)
- Cornmeal or extra flour for dusting

- Pizza sauce
- Shredded cheese
- Vegetables, meats, or fresh herbs of your choice
👩🍳 Step-by-Step Instructions
1️⃣ Prepare the Dough
In a mixing bowl, combine the sourdough discard, warm water, and olive oil, stirring until blended. Mix in the sugar and salt.
Gradually add the flour, a little at a time. If you plan to use instant yeast, stir it into the first portion of flour before adding it. Continue mixing until a soft dough starts to form.
2️⃣ Knead the Dough
Place the dough on a lightly floured work surface. Knead it for 8–10 minutes until it becomes smooth, soft, and slightly elastic.
- If the dough feels too sticky, sprinkle in a bit more flour.
- If it seems too firm or dry, add a small splash of water.
3️⃣ First Rise
Shape the dough into a ball and transfer it to a lightly oiled bowl. Cover the bowl and allow the dough to rise for 1–2 hours, or until it roughly doubles in size.
For a stronger sourdough flavor, place the dough in the refrigerator overnight and use it the next day.
4️⃣ Shape the Pizza
Once risen, punch down the dough and transfer it to a floured surface. Roll or stretch it into your desired pizza shape and thickness. Sprinkle cornmeal or flour on a baking tray or pizza stone to prevent sticking.
5️⃣ Add Toppings & Bake
Spread your favorite pizza sauce, then add cheese and toppings.
Bake in a preheated oven at 450°F (230°C) for 12–15 minutes, or until the crust is golden and the cheese is melted and bubbly.
