Savory Beef & Vegetable Stir-Fried Noodles

Ingredients

  • 400 g beef, thinly sliced
  • 1 tsp baking soda
  • Water (for soaking and cooking)
  • 1 tbsp cornstarch or potato starch
  • 300 g egg noodles or wheat noodles
  • 1 carrot, cut into thin matchsticks
  • 1 small piece fresh ginger, finely minced
  • 1 leek, thinly sliced
  • 1 bell pepper, cut into strips
  • 2 garlic cloves, finely chopped
  • 100 g enoki mushrooms
  • 100 g green beans or bean sprouts
  • 2 green onions, chopped
  • Salt, as needed
  • Black pepper, to taste
  • 2 tbsp spicy ketchup
  • 2 tbsp unagi sauce
  • 1 tbsp oyster sauce
  • 1 tbsp teriyaki sauce
  • 1 tsp toasted sesame seeds
  • Extra pinch of baking soda (optional, for additional tenderness)

👩‍🍳 Cooking Method

1️⃣ Place the sliced beef in a bowl. Add baking soda and a small splash of water, mix well, and leave it for about 15 minutes to soften the meat. Afterward, rinse the beef thoroughly and pat it dry.

2️⃣ Sprinkle the starch, salt, and black pepper over the beef. Toss until the slices are evenly coated and set aside.

3️⃣ Cook the noodles in boiling water according to the package instructions until they reach an al dente texture. Drain and lightly coat them with oil so they don’t stick together.

4️⃣ Heat a large wok or frying pan with a little olive oil. Add the minced ginger and garlic and sauté briefly until aromatic.

5️⃣ Add the prepared beef and stir-fry on high heat until it becomes nicely browned. Remove it from the pan while it is still slightly undercooked.

6️⃣ In the same wok, add the carrot, leek, bell pepper, beans, and enoki mushrooms. Stir-fry the vegetables until they are just tender but still vibrant and crisp.

7️⃣ Return the beef to the pan. Pour in the spicy ketchup, unagi sauce, oyster sauce, and teriyaki sauce. Stir everything together so the meat and vegetables are well coated.

8️⃣ Add the cooked noodles and chopped green onions. Toss everything until the noodles soak up the flavorful sauce.

9️⃣ Taste and adjust seasoning with additional salt or pepper if needed.

🔟 Finish by sprinkling toasted sesame seeds over the top and serve the noodles hot.
