Prepare the avocado mash Mash the avocado with lemon juice, salt, and pepper until creamy. Set aside.

Cook the halloumi In the same pan, add halloumi slices and cook until golden brown on both sides.

Assemble the stack Spread avocado mash on toast, layer halloumi, then chorizo slices.
Add the eggs Place poached eggs on top.
Garnish and serve Drizzle chili oil, sprinkle chives and bacon bits, and serve immediately.
